This delicious recipe is great as a lunch with salad, or as a carbohydrate vegetable dish with meat. It has a lovely rich Autumn comfort food taste. First, get some Umbria lentils from an Italian leaning deli (Puy lentils will probably do, but the Umbrian ones are best - a lovely firm nutty texture). Simmer in bought chicken stock for 30 mins, then add a handful of celery leaves, 5 or so sprigs of thyme, and a couple of cloves of garlic and leave for 10 mins for the lentils to absorb the flavours - which they do remarkably well. Sticking with Italy, these are delicious soft almond biscuits - great with a good cup of Italian coffee (we favour Lavazza Rosso). They are not easy to find, and expensive when you do find them - but worth it. In keeping with the Italian way of all food being specific to a particular area, these are a speciality of Sienna. Get some. | ||||||
